Vinification:From soft pressing (<2 bar) of whole Chardonnay grapes (85%), Ribolla Gialla (15%) assembled in the press. Separation from the lees with cold decantation (12 °C) for 16 hours in a stainless steel tank.
70% it’s placed in the NOE® for spontaneous fermentation on indigenous yeasts (9 months) and 30% placed in oak barrels (300l) for spontaneous fermentation on indigenous yeasts (9 months).
Blended and bottled without stabilizers, clarifiers and unfiltered.
Maturation for 12 months.
Aged in the bottle at least 4 months before sale.
Vineyard: Castel San Mauro – Sud Sud-Est, 140 m s.l.m.
Planting age: 40 years 3500 (ceppi / Ha)
Soil: uniformly made up of stratified marls and sandstones of Eocene origin (50 million years old whose erosion has formed the typical clayey soil called CORMÒNS FLISCH, more commonly known as PONCA
Training method: TRITON
Average production: 1,2 kg / vine
Harvest period: first half of September, done manually with boxes
