Vinification: from MERLOT grapes destemmed and pressed in conical oak vats and in the NOE® system (marble barrels).
Fermentative maceration for at least 15 days on indigenous yeasts.
Drawn off and pressed in the NOE® system (marble barrels).
Aged for 12 months.
Bottled without added sulphites, stabilizers, clarifiers and filter.
Aged in the bottle at least 5 months before sale.
Vineyard: Castel San Mauro – South South-Est, 150 – 200 m s.l.m.
Planting age: 15 yeras 5000 vines / Ha
Soil: Uniformly made up of stratified marl and sandstone of Eocene origin (50 million years old whose erosion has formed the typical clayey soil called CORMÒNS FLISCH, more commonly known as PONCA.
Training method: TRITON
Average production: 45 q.li / Ha
Harvest period: first half of October, done manually with boxes
