It is a natural sparkling wine, with fermentation in the bottle according to the NON METHOD.
Obtained from the pressing of whole Ribolla Gialla (70%), Chardonnay (20%) and Pinot Grigio (10% blended in fermentation after fermentative maceration of destemmed grapes for 24 H) grapes.
Vinified in a NOE® marble tank on indigenous yeasts, unfiltered, unclarified, unstabilised.
Bottled with secondary fermentation without the addition of selected yeasts and sulphites.
Aged in the bottle at least nine months before disgorgement, made upon sales order. The vineyard, pruned with the “TRITON” method, develops south-south-east, 150 180 m above sea level. On PONCA (Eocene flysch of marl and sandstone).
Average production: 55 q./ha.
Early harvest, done in mid August manually using boxes.
Naturally alcoholic (12.5% vol.), in good balance with the total acidity (5.50 grams/litre), it is a brut (0.60 grams/litre of reducing sugars) practically free of sulfur dioxide.
The fine and persistent perlage is pleasant. Ideal in combination with fish, seafood risottos, from sea bass to sea bream.
